plum mush

Another batch of marmalade or jam - I hope "mush" is actually the proper translation for the german "Mus", i like the word.

This time from plums. Very tasty and extremely simple:

3 kg of plums, washed, cut in half and/or quarters, without the stones
200 gr white sugar
300 gr brown sugar
1 teaspoon cinnamon (or 2-3 sticks)
3-5 cloves, grounded

Mix the plums with the sugars and the spices, let it rest for about 2 hours (to get it juicy), then put it on a deep oven-tray and bake it in the oven: first 3/4 to 1 hour with a slightly open oven-door (put a wooden spoon just between the door) to get rid of the water. Then for another 2-3 hours till the mush is dark and soft and lots of the liquid is gone (evaporated?).
Oh, the temperature should be about 180° Celcius.

So simple, an sooo delicious!! It is not that sweet by the way (just 500 gr sugar for 3 kg "sour" fruits) just very fruity. Good.
